Olli Salimini, Mini Salami

I typically don’t hike with salami; the main reason is due to cutting and the smell after cutting. I like something quick and easy.   Over the Holiday’s our local store started carrying Olli Salamini .  They about 3/4” diameter x 1.5 inches long, about two bites each.   Perfect size, no cutting, no smells, no clean up and I really like the taste. They come in spicy, apple wood smoked and mild varieties and can be purchased online.  I’ll definitely be taking these on future trips.

You can also find or do your own pre-cut salami and bag them. I like to bring pepperoni.

I tried to repackage some sliced salami recently. I wanted to vacuum bag individual servings, but my there was too much water for my vacuum bagger to work properly. I ended up just heat sealing the individual servings in small plastic bags. It works, but it’s kind of wasteful (of plastic bags) and it’s not something that I would want to do for long term storage. The sliced salami is packed with more water than the whole salamis. I would live to try the salaminis, but they aren’t sold within a hundred miles of here. I haven’t looked to see if there are online sellers. There is a snack sausage called Lil’ Chub that is available locally and online and it’s not too bad. Pepperoni sticks are probably the most widely available.

Pre cut spoils much faster. You are better off with single serving sausages.

Mmmmm, these are good, expensive though.
