What do you use to eat with in the backcountry?

Sounds like the issue is the food, not the tools. Check into making your own dehydrated food, or look into Packitgourmet.com, or whatever…that's all going to be a lot better than MREs (gag). Then it won't matter what your utensils are. Some sort of plate or bowl and a spoon or spork, whatever, is all good to get the food into you. You can still keep it simple (boil bag cooking) and eat well.

Thanks for you service and having to put up with MREs!

Non-cook: zip loc bowl, guess I might as well eat from the zip loc bag.
Cook: Evernew Titanium UL 500 or 750.
I have chopsticks, an Esbit foldable titanium spoon, or a bamboo spoon (great mouth feel, but titanium spoon is easier to clean).

The Snowpeak titanium bowl and a folding Ti spoon or spork would be my choices. You can stash all kinds of stuff in the bowl to make it volume efficient in your pack. The bowl is 1.6oz and $16.95 retail. Makes a good cook pot too. In fact, I don't know why it isn't on every UL gear list.

I got my folding spoon on eBay. I went with folding as it also fits in my 450ml mug with a Ti Esbit wing stove. Chopsticks are easy for the "unspoonable" food.

I don't cook anything, just boil water for dinners, which I eat out of the bag with a long-handled spoon.

I did stumble on a pretty good solution for a bowl, though. It's a round #5 PP (polypropylene) bowl that comes with a microwave udon noodle soup. It weighs 20g and holds just about 1/2 liter of water.
