I'm going to try to do a good dehydrated Pad Thai. Basic plan is to make "real" pad thai with modifications only for dehydration purposes. I need a ruling on some issues from people with more experience.
(1) Cellophane noodles – see above criteria, the dish will be prepared in the normal way before dehydration, noodles briefly soaked in hot water, then stir fried. If possible I don't want to turn this into noodle confetti. Can I gather the noodles into a reasonably compact lumps in the dehydrator so they will be packable? Will this work?
(2) Eggs. Should I leave the eggs out. Can you dehydrate "scrambled" eggs very well?
(3) Shrimp – I have heard shrimp de/rehydrates pretty well.
(4) bean sprouts – this one worries me the most. If I use them I'm afraid the rehydrated version would entirely eliminate their function. A wilted bean sprout is worse than no bean sprout. Techniques? Substitutes?
