On my last trip I borrowed my mother in law's dehydrator and dehydrated some chili mac. It took forever to rehydrate, and most times I ended up eating very crunchy chili after 30 minutes. I like to hike all day, and by the time I stop, waiting that long to eat is torture. As I sit here at work, starving because I have already eaten my lunch, I'm thinking I need to do some trail food experimentation. I think I'm going to make a weekly batch of something and then test it at different rehydration times. Maybe report back on what I've learned. I'm basically interested in things that rehydrate the quickest. I think I'm going to start with chili mac again, but with tvp instead beef. Thoughts?

Small pieces and thin layers. That helps both dehydrating and rehydrating. Also, an hour from camp, add water to your dinner. Heat the glop when you get to camp. That will save time and result in more fully rehydrated meals.

Jon, that is actually the website where I got the recipe from. For some reason I thought I read that tvp rehydrates faster than ground beef. Bummer to hear that tvp rehydrates slower, as I'm slowly making my way into the vegetarian camp.

Oops! Sorry, I meant ground beef rehydrates faster than other cuts of beef :-) Yes, TVP is way quick! Now then….if you want your TVP to look and taste like ground beef, go get some beefish TVP from Harmony House Foods. It works perfectly!!

I'm sitting at my desk eating a vegan chili I made with TVP. It about 4 minutes to rehydrate at room temperature with water from keurig. I left out the elbows this time. Super tasty and super quick, but maybe lacking in calories (good for work lunches, bad for the trail). I've got a weeks worth of it now in my cabinet at work. I wonder if I will get looks from people if I fire up my alcohol stove to boil the water next time…

Consider adding in oil, like a packet worth, for extra calories. You could also serve it over couscous or rice for more calories.
