I know some of the Deuter packs are fully adjustable over a fairly large range.
I have not used it personally but Zpacks offers this as an option with an ounce penalty, as I recall.
In Europe, they're all perhaps 80-90% of the packs … and I don't like it. One size for all ? Wright ? The harness is adjustable, but the frame is not.
And, oh yes, I had several of those packs. Never again.
The Fusion backpacks from Six Moon Designs:

Not UL, but lighter than most in its class is the Osprey Volt.

have much stock.
If your backlentgh is short to medium, a fully adjustable harness might work. If your backlentgh is large, my experience is that it won't work. Some brands had/have taller framed versions from their normal models with a fully adjustable harness for a reason.
Yes, the Gossamer Gear Murmur 15 has an adjustable length.
Agree one size with adjustability can be less than ideal, especially for larger size setting. Other packs have different sizes with some adjustability. Some packs from Osprey have that (Kestrel for example has SM and ML size, with adjustable shoulder area). Other end of the spectrum perhaps are packs like the Ohm 2.0 with its movable hip belt.
Most (all?) Aarn packs have an adjustable back length.
Apart from the CDT, all ULA packs will adjust up to 3 inches (they adjust by raising or lowering the belt) within their specific torso length (i.e. small, medium, large).

As a general ruke of thumb, I think.you will find that most pack designs made these days with interchangeable hip belts have at least an inch or two vertical adjustment at their contact points on the pack body.
ULA, SMD.Zpacks new Arc haul and probably the larger Gossamer gear packs, etc etc..
