I keep looking for a shoulder holster arrangement, sorta like carrying a concealed weap…I mean water bottle. Bottles on the front of the shoulder strap are simply too high and require two hands to get them back in. Side pockets are hit or miss when it comes to easy access. But a bottle below the armpit, down close to the waist belt, but angled forward for arm clearance and easy access…

Another way to ask the question: Which packs have easy to loose side pockets?  You never see that question asked!  There is a very high correlation between easy to reach and easy to loose.  No one ever posts about what they lost out of small low cut angled side pockets or stretch bottom trash pockets.  Back in the early days of UL most all side pockets were fairly deep and the common move was to slip off one strap  of the LW pack to grab out a bottle.
Interesting you posted this comment. Yesterday I decided to use a pack where I can’t reach the side pockets and I tried just slipping off one strap to reach the bottle. It was no big deal and I concluded that I am making much to do about nothing. In fact, it’s silly but it was fun doing this while walking.
I have a ULA and I have found the water bottle easy to reach. So that might be an option for you.
