"Instant Vegies"?

The “Just Tomatoes!” folks sold to “Karen’s Naturals” and Karen seems to have dropped the ball.

The “Just Veggies” pack includes freeze-dried corn and peas for fast reconstitution, plus air-dried carrots and peppers, plus dehydrated tomatoes. It is an attractive and tasty combination that comes back fast in a cozy of hot water.

I was about to reorder when I discovered this loss. I am saddened.

What are you using for your “instant” vegetables mix?

The three sources mentioned above are all quite good in my experience, but…why not dehydrate your own?  I have yet to find a commercial source for dehydrated ingredients that equals, much less exceeds, the quality of DIY dehydration.  They do offer unparalleled convenience however.

Edit: perhaps I misunderstood the OPs meaning of “dropped the ball”, but it appears Just Veggies are still available.  Have they changed?

Y’all probably know this already and just my $.02 but I prefer freeze dried over dehydrated because the taste/appearance is closer to fresh veggies and they rehydrate more quickly.

I would have to agree with Matthew that FD is generally better than dehydrated, but also more expensive and not DIY.

an ad popped up for that freeze drier

one will pop up for you soon

one would have to freeze dry a lot of food to make financial sense

Not everything has to make financial sense….

(and I don’t see ads….)

@JCH –

I was unable to find them on amazon and incorrectly concluded that they were MIA everywhere.  I subsequently did find that the 8 oz packs were available through the King Soopers chain.

Thanks all for your suggestions.  I’m ordering my home freeze-dryer soon.

David, Mountain House claims that their #10 tins will be fine for up to 25 years. This is due to them flushing all the air (oxygen) out with nitrogen (an inert gas), and then sealing the can. They claim that their regular products will be remain good for 5-6 years.
