Is there a consensus on baffle height / loft / warmth?  Best practices?

I found the following two charts, that I used to make my first quilt about 2 years ago.  I would like to have your opinions on all this, maximizing warmth-to-weight.  I think the finished baffle height was 2″ even though the chart told me 2.25

I ended up adding an 11th baffle with 2oz stuff to make the quilt longer.
