No overalls, but you can get Tyvek coveralls which are pretty light.

OK, I’ll bite. Why would they be?
What do you like about them; how do you use them? Did you really mean overalls or coveralls? How are they better than pants (for hiking)?
I use overalls in my yard and the main reason I like them is because they fit me better than pants and I can store things in the front pocket. The built in suspenders work better than a belt for me.
So, I am thinking my pants might stay up better while backpacking and I would definitely use the front pocket. In cold weather I hike with a bib and I really like that fit.
I have never worn coveralls, so I don’t know how those would work.

I do see the appeal of suspenders. The clip-on type are easy enough to wear with any trousers that you prefer.
I wonder how the straps on the overalls would feel under the pack straps, I don’t think I would like it personally.
You could modify a pair of overalls by cutting off the sleeves, arm pits and collar.

There you go. Tyvek coveralls weigh only a few ounces and are inexpensive to experiment with. As a bonus, the fabric does not fray, so all you have to do is cut it to shape; no seams required.
Link: You can move suspender straps to whatever position is comfortable. They are pretty thin, so might not be an issue at all.

How would Tyvek breathe as a fabric, seems like it would retain lots of moisture.

I’ve been looking for one of those. All I have been able to find are 30-packs. Did you find somewhere that sells single coats?
