I like a reasonably high fat diet. I've asked before but haven't had much response.
What is the issue with dehydrating meals with fat? I tried a coconut chicken curry the other day and it dehydrated fine, it was as oily as maybe a bag of potato chips. I stuck it in the fridge and ate it a week later. It dehydrated fine and tasted good. the chicken was like jerky but I expected that. Coconut cream is very high in fat but it seemed to work.
Ice also dehydrated a hummus before that had a decent amount of olive oil and it fried and ground up looking like pale cumin and dehydrated perfectly.
Am I risking getting sick?
I'm currently doing a chilli con carne for a trip this weekend that I used regular mince in rather than the extra lean mince.
