October through March is the season when I dehydrate food in preparation for the following backpacking season. As I was passing through the grocery store, I saw a sale on red bell peppers, so I bought four. I sliced those thinly and threw them on the food dehydrator to run overnight. By morning, I could hardly see. The pepper fumes are almost like pepper spray from the front lines of some political demonstration.

It might be best to dehydrate this stuff in a place with better ventilation.

Thanks for taking a hit for the dehydrating team, Bob. It's a good thing that I hate bell peppers, or I might have had that experience first. Maybe you should contact the Pentagon about your findings, as it might make good anti-ISIS ordnance during a sneaky ground attack.

You reminded me of the time that I decided to empty a can of expired bear pepper spray off the patio into some safe bushes. Then the breeze shifted… man, I was completely incapacitated for over 15 minutes, couldn't see, and my eyes and nose were painfully useless.

I dehydrated some Jalapenos. These were very mild, eating them I didn't hardly notice any heat. Yet my hands were on fire for 12 hours afterwards. I tried various remedies which didn't work. A fairly mild fire though. Fortunately, from past experience, I didn't touch my eyes.

I know what you mean. I had to go through military tear gas training at Fort Leonard Wood once many years ago. Once it hits you, you will be incapacitated almost immediately (cough, gasp, wheeze). Only by standing outside with a stiff breeze blowing into your face will you have any hope of recovery. Plus, that was CS gas, not the mild CN gas that the National Guard used, and certainly not pepper spray for bears.

I've dehydrated all sorts of peppers, including red, green, and yellow bell peppers and jalapenos. Never experienced anything like that. They give off quite a bit of odor/aroma (depending on your preferences) but nothing irritating. Onions, though, really stunk up the place. I stick to the store-bought ones now.

I did make the mistake once of throwing pickled jalapenos into a hot pan of fajitas. Almost had to evacuate the house. Vaporized vinegar is not fun.
