Does anyone have a recipe using powdered coconut and chia seeds to make a backpacker no freeze "ice cream"? I just got back from the JMT and someone in my group, who is still hiking to Mt. Whitney, made in a snack size bag, a desert. She called it "ice cream" but I didn't get the recipe and want to make it for my upcoming Isle Royal trip.

Add some rehydrated freeze dried pineapple juice and a shot of white rum and you've got the makings of a bodacious backcountry pina colada.
