I'm fly out west for a week backpacking trip. Since we won't have much time before we start hiking once I arrive, I wanted to buy my food at home and check it when flying. Is there any issue with checking food? I'm talking all dry food, no liquids.

nope. It's all good. The only time you may get into trouble is flying overseas, where there are rules about bringing in certain kinds of foods. But domestically – no worries at all.
I wonder if the bags that freeze dried food comes in would burst at the altitude that planes fly????

USA commercial airplane luggage compartments are pressurized the same as the passenger cabin, to the equivalent of roughly 8,000 feet elevation.
Commercial freeze dried food should be fine.

We've checked luggage full of dried and freeze-dried food many times, no problems.
Be careful about stoves, some carriers won't allow a liquid gas fuel container, even if it's empty…a real problem if it's integral to the stove (e.g. Svea). I no longer use these, though.
