Anyone make their own veggie chips?

I'm intrigued with trying this….particularly by dehydrating them on a lower heat rather than baking them on a higher heat. One blog I ran across though said that either method produced chips that, unlike potato chips, were hard and difficult to chew.

Maybe they were not thin enough?

If anyone has any wisdom/experience to share before I start slicing veggies, I'd appreciate it.

I've made sweet potato "chips".

Trick is to lightly steam them first (yes, seems counter intuitive to steam something you are going to dehydrate, but it helps to open up fibers etc, allowing them to better dry out later), and then slice as thinly as you can.

Those Alaskan Inuit knives/bowls are good for this job, Ulu knives or whatever they are called. Start at a higher temp, and then after awhile lower. This is because as moisture is escaping, it's naturally cooling down the surface via evaporation.

With a lot of veggies and fruits, it also helps to treat with some lemon juice, ascorbic acid, or citric acid, as all of these slow down/prevent oxidation some. A quick dunk in water with one of these in same is fine.

Your welcome Rusty. Btw, thinking a bit more about it, i would probably change "lightly steamed" to "moderately steamed". You want it to get somewhat soft. One could boil too, but you lose more nutrients that way.
