What's the best way to stitch the apex where a hiking pole would go? Also in what order would you generally sew a tent? I would think the apex would be on the last things?

Are you talking about a pyramid?

If there are 4 sides and each side has two pieces, I sew the two pieces together for each side first. Then I sew the four sides together. It gets a little unwieldy as it gets bigger, so easier to sew together several assemblies, then sew these assemblies together last.

Then I take a circle of reinforcing fabric for the top. I first set up the tent. (Without the reinforcement it's weak, but if it's not too windy it'll be okay). Then I put the circle over the top. Make a fold (gather) at each of the four diagonal seams to turn it into a cone shape. I put one hand stitch at each of the four folds to keep it in place. Then I take down tent, and sew around the circumference of the cone, maye two or three rows so it doesn't rip.

There's an article with more details and pictures but I think you have to be a member to read it.

What I would normally do for a pyramid would be to sew each half separately, attach the reinforcing fabric, and then sew the two halves together starting in the apex and working out.

The nice thing about this way is that if you use a faux felled seam the first pass is super easy

EDIT: The second part of the picture shows two of the first part being sewn together around the edge

Of course finishing the seam is a pain and sort of a crap shoot
