I'm going to Paris next week and have been granted a free day by my significant other – can any of the Euro members suggest a good outdoors/mountaineering shop in central Paris? I'm staying near Les Halles.

In France you see hordes of people walking with stuf from Decathlon, it's a budget chain of stores but they do mike nice stuf if you're on a budget and you don't won't give the stuff a beating.
No idea if there's a subsidary near where you'll be, but a google search will give you decathlons website and google maps will show you how to go there.
