very simple, quick, no simmer recipes–how to make beans and rice interesting.

Hi,

I'm experimenting with alternatives to ready-made dehydrated meals. I bought some minute rice, some couscous, and some bean flakes. The goal is to create meals that require no simmering, just throw the ingredients in recently boiled water, wait X minutes, and eat. (BTW: I mostly use a caldera cone with a .5l pot. I add food directly to the pot after the water has boiled and eat out of the pot).

Perhaps some (preferably store bought, pre-mixed) spice mix would make things more appetizing. I'm willing to take along some olive oil also.

BTW: I ruled out pasta since it seems to require simmering.

Can anyone point me to very, very simple recipes that will make plain beans and rice less like prison food :)?

Hi Rafi,

Not sure if it helps, but my local grocery stores (Albertsons and Vons) sell small jars of freeze dried veggies and herbs (e.g., jalapeno, cilantro, garlic, onion, etc.)

I've had pretty good luck adding some of these, along with cumin powder or chipotle flakes to some of my bean and rice meals.

Of course, you could also supplement the beans and rice with a pouch of chicken or tuna.

Don't forget taco sauce packets too from the local fast food joints.

I can go a long, long way on couscous, instant rice, and instant quinoa. All I have to add are some tiny amounts of parmesan cheese, spices, bacon flakes, and the like.

If nothing else, add some onion flakes, garlic powder, or mesquite spice.

If I have plenty of fuel, I boil the water. If not, I use warm water. If I am desperate, I use cold water. It all works.

Corn chips make for a nice addition – they'll still have a little crunch if you don't wait too long on the redhydration. And you can try the seasoned varieties for more zip.
