I have a couple down garments and a sleeping bag, and I've heard that some companies seal the seams for warmth. Has anyone tried this? Does it add noticeable warmth, and is breathability affected much?

Insulation (Down) works by trapping warm air in the baffles of the bag. unfortunately when we move down gets compressed and the air is forced out. Then the down expands and draws in cool air which you now have to reheat. So the more you restrict the air flow in and out of the down the better.
If the outer fabric of your bag is made from Gortex, Event, or some other waterproof breathable fabric, most of the air flow we be through the holes punched by the sewing needle when the bag was made. little goes through the fabric. So by tapping the seams or applying seam sealer you can reduce air flow. However most people don't prefer Water proof breathable bags because of condensation concerns and sealing the seams could make it more likely that condensation will occur.
However if your bag is made from a water resistant nylon like momentum air can flow through the fabric as well at through the seams. Most of the air goes through the fabric not the seams. So sealing the seams won't have much effect.
