I have been looking for a suitable UL waterproof daypack to take with me kayaking and hike certain trails while my kayak is parked.

I saw this on ebay, listed at 3.4oz and a 25l capacity. It's basically a dry bag made of cordura with some backpack straps.. no hip belt or chest strap. It is from china and that scares me right off the bat.
    What do you guys/gals think?

I would guess that they will leak on your first trip. They could be good. I need about 35L, though.

By "waterproof", do you mean a drybag-type or just made from waterproof materials?

I have an Exped Cloudburst (25L) that I take kayaking. It's a drybag style but wouldn't be as durable as your traditional (like SeaLine's) boating drybag:

Sea to Summit has their "Ultra-Sil" daypacks. I take mine for layover hikes. It's smaller than the Cloudburst and, imo, the fabric is much more fragile, but it's also much lighter. After only a couple of hikes, mine has tiny abrasion holes on the bottom.

I know this thread is several days old now, but I just remembered seeing a good price on the Exped bag Sumi mentioned at Probikekit – http://tinyurl.com/9ep4yxx. I've bought a bunch of cycling gear from them, but recently some Exped dry bags as well. They're in the UK, but have free standard shipping on everything. Will take a little more than a week, though.
