I like the area a lot. You might consider doing a section of the CDT. There are a lot of opportunities for loop hikes. My last one was around rainbow mountain and was great. I can't speak to winter conditions there though. I have only been as close as Discovery ski area in winter. Enjoy!
I'm assuming you mean snowshoe or ski, there isn't much for "hiking" in the winter in the Pintlers :)
It's gorgeous country and as mentioned above, lots of nice loops can be done- from short to long; my guess is that some of the trailhead access roads are kept open in the winter, but many are gated shut and not maintained- you'd have to get a travel plan map from the Beaverhead-Deerlodge National Forest in Dillon (or online)
