Any vegans on this board? If so, what are some of your favorite items to take on the trail?
Jul 27, 2012 at 8:10 am #1897956I don't go by "vegan" but I do follow a "plant-based" way of life. I eat a lot of nuts, seeds, fruits, veggies and whole grains – all of which are easily taken hiking :-) I always have homemade raw bars with us!

Jul 30, 2012 at 10:02 pm #1898725If you have a food dehydrator, then just about anything you eat at home can be made trail-friendly. Most grains, lentils, beans, chickpeas and vegetables (or dishes containing a combo of them) can be dried and rehydrated. I also make liberal use of nuts (ground, whole, or powdered as a milk) and soy protein, plus coconut powder or flakes. And of course fruits. Dried hummus (can be bought this way) is my favorite lunch spread. I often carry pestos and other sauces wet, to add to a meal once it's rehydrated.

I even wrote a book on vegan and vegetarian backpacking (thanks to the person that posted the link to my site) and if you go back into the forums you'll see some of my recipes.

It's one of our favorites. Quinoa is a one of my favorites too as are my homemade energy bars. I love chia too. It makes a great egg replacer and thickener for when you accidentally over-hydrate something while adding a good bit of nutrition.

On my last trip I tried Mary Jane's Organic dried meal, and I didn't really care for that, and they had too few vegetables.
I rely on whole food vegetables, especially leafy greens, for most of the common vitamins and minerals that are supposedly lacking in vegan diets. Since I don't own a dehydrator yet, I've taken some multivitamin pills with me up till now, but I would like to eventually just take my B12 and Omega 3 (from algae) with me. So if you too rely on food for your vitamins, then I'd recommend a dehydrator, although you might have more to choose from in terms of pre-made dinners where you live.
One thing I've done to up my vegetable intake is to use some dried vegetable soup in a lot of the dishes I make. Red lentils and vegetable soup makes for a really good, super easy meal. Just add both to a plastic bag and when you get to your campsite, throw the amount of water needed in your pot and add the mix to shorten cooking time. Even if you don't pre-soak it it'll still cook pretty quick. I like to eat it with tortillas or something on the side, and add some oil if I've really been at it (I am trying to shed some weight though [whaaa an overweight vegan?!?!?!] so unless I'm particularly famished I don't add any).
