    We had these over the weekend while hiking up at Rainier :-) A delicious raw treat.

    Out with all my boys…my oldest is looking more like a man than a kid these days. Eek.

    German Chocolate Bars

    Ingredients:

    1½ cups Medjool dates, pitted
    ½ cup raw pecans
    ¼ cup Unsweetend Coconut Flakes
    ¼ cup Navitas Naturals Cacao Nibs Sweetened
    ¼ cup unsweetened cocoa powder
    1 tsp pure vanilla extract
    Pinch of fine sea salt
    Directions:

    Add everything to a food processor, process on high until finely chopped and it starts coming together in a ball. Line a bread pan with plastic wrap, pack the mixture in, flattening. Chill for a couple of hours, slice and wrap each bar. Keep refrigerated until trail time.

    This is a fun recipe. And quite tasty too! Made the first batch as above, except I couldn't find sweetened nibs, so I used regular raw ones and added a bit of honey to the recipe.

    For the next batch, I really had fun. I used 1 cup of the dates and 1/2 cup dried turkish apricots. I added 1/4 cup freeze-dried organic blueberries. And then I made the coconut butter filling from the raw oreo recipe, pressed this recipe into an 11×7 pan, spread the raw oreo filling on half, folded the other half over and pressed together. These things are fricking tasty!

    Those sound really good, Doug! I'd rather have the dried apricots than the dates–I'm sure they add a lot to the flavor! The dried apricot and chocolate combo is great, IMHO!

    I don't like chocolate with dates but those bars look really good and would probably work great without chocolate.

    Sarah, where can I get the "Medjool dates" locally- Issaquah?

    I need to try some- I normally would turn my nose up at eating dates so I need to experiment (try) a couple. Can I get them in bulk? For me that means 1 or 2. If they can make it past my tongue I'll buy more.

    Costco has them in 2 lb boxes……

    Just be sure to pit them!!
