I'm a big fan of Trails Illustrated. However, the wilderness area I want to go to, West Elk, is cut in half by two different maps!!! It is so annoying. Anyone know a good place to order custom maps with trails on it? Does this exist?

That's why Greenwich England is located where it is – to maximize map sales. The nice places are on the edges of two maps and the really nice places are on the corners of four maps.
Better yet, use http://www.hillmap.com to zoom in on the area you're interested in, then click the "Input and Output" tab, then "Buy MyTopo".
