I'm looking for ideas on things to add into Ramen to help dress it up a bit. Meats, veggies and anything dehydrated/freeze dried…etc.
I have been doing the foil packs of tuna, chicken, spam and what not, but wanted to get some input from other folks.

Oscar Mayer Ready-to-Serve Real Bacon Bits, hickory smoke flavor added. 3 oz.
The plastic package says 12 servings per package, but those are only 1 Tbsp, and one serving is 25 calories. So, one whole package is 300 calories, fairly high in fat, protein, and salt.

My favorite is "oriental" flavor with spinach, mushrooms (shitake or brown), bean sprouts, tofu, and chili paste. I usually add these fresh, though mushrooms, tofu, and spinach are easy to dehydrate and chili paste can be carried in a mini ziplock. Never tried to dehydrate bean sprouts.
Pretty much everything works for adding in – whatever you like.
If I use dried veggies I add it to the water before boiling and then add the noodles, although ramen can be FBC'ed easily since it is pre-cooked.
But personally if eating ramen my favorite is to soak the noodles FBC style with fd veggies, drain and then shake in herbs and spices, olive oil and Parmesan cheese. It is really tasty:

…and easy to tailor recipes, Quick Mountain Spaghetti, for instance up/down depending on your trip, caloric demand, morale-boosting-flavor factor. I also like the QMS idea because all the ingredients could be premixed in a ziplock. Add sliced pepperoni and boiling water. Easy. No packaging trash, etc.

Dwight, yep! Pepperoni, bacon, chicken, etc all work well – so does other cheeses :-)
That is the beauty of thinking FBC – you can customize recipes SO easily!
