Has anyone tried to dehydrate spaghetti squash, at least mixed with something else? Both my preservation books just have a general category of winter squash, and one of them says they don't recommend dehydrating squash.

Yes… it works very well. Cook it first… then dry the strands on mesh lined dehydrator trays. This takes about 6 to 8 hours in my Excalibur at 135°F. I simply cover it with boiling water to rehydrate.

I find that, like sweet potatoes, spaghetti squash will lose a bit of flavor if kept for more than 3 or 4 months after drying so I tend to dry it closer to my trips.
