Combining lightweight hiking with a little urban travel/airport on either side. What's the best lightweight (but secure and waterproof) product to store electronics (iPhone, iPod) on the trail if vehicle storage at the trailhead isn't an option?

Probably bubble wrap. It can withstand the Tourister Apes, and is mostly air.

(Unfortunately need the phone before/after hiking, but not during. An iPod is the only way to tolerate any kids on the plane … besides plenty of drinks)

I use a small cuben drybag. I keep things like medicine, cell phone, toilet paper, Steripen,… I pack it in a side pocket while hiking for easy access.
Pack it deep in my sleeping bag when flying/traveling to avoid damage.

Instead of one of those heavier zip-top bags with silicone dry packs that are sold at REI, I used a zip-loc bag for my Kindle. Into it I added several of those "Do Not Eat" packets that I had saved at work—from prescriptions and from our lab materials packets. Those things are ubitquitous these days, if you are friendly with your local pharmacist or hospital lab technician, I bet you could get some for free. Wasn't excessively rainy on my trip, nor did I drop my gear in a creek, so don't know how well it works. I also include a couple of those packets in my camera zip-loc. The Lok-Sak would be sturdier, and likely more waterproof. I might have to try that this summer.
I also use the desiccant packs. I buy them in bulk and add one to every bag of dehydrated food.
I also keep one in every dry bag to absorb the condensation that happens when the temperature drops.
I don't recommend using zip lock bags for anything expensive as they can pop open with the slightest pressure. I double bagged my camera and pressure from a fall or something caused the seal to pop open.
It was raining hard and before I realized it, my camera was dead.
Aloksak's and drybags are better.
I am surprised at how durable and watertight cuben drybags are considering their weight.
