If you like Mojito's, you'll like this chicken and rice dish. You could also substitute the rice with CousCous.
Mojito Chicken & Rice
1 1/1 T. Mint
2 Packets Tru Lime or 1 1/2 T. Lime juice
1 T. Olive Oil
1 T. Orange juice (My wife likes OJ in the mornings and we usually have an 8 ounce container of it along) – You could also add white rum instead of the OJ
Dash of Salt
Dash of Pepper
1 7ounce package of Tyson Chicken
1 C. Choice of Rice (we prefer Jasmine these days)At home package ingredients appropriately. In camp, Mix together 1T of Mint, the Tru Lime (add 2 T water), the Orange Juice and the Olive oil – Mix together in a ziplock 'squishing" things together and let sit for about an hour.
Begin preparing your rice or couscous according to how you brought it.
In a pan dump your chicken and the previous mixture, heat well.
When Rice is finished, add chicken mixture, sprinkle remaining mint on top. Salt and Pepper to taste if needed.
Big meal and very filling. The packaged and canned chicken is suitable for drying so this meal could be made ahead of time and dried if you chose.
