Split Pea and Quinoa Soup – FBC style recipe

Split Pea and Quinoa Soup
Serves 1-2

This would be vegan, but the True Lemon contains lactose.

1/4 cup (cooked and dehydrated) split peas – green or yellow
1/4 cup (cooked and dehydrated) quinoa
2 T dried mixed veggies
1 t onion flakes
1 packet True Lemon
1/2 vegetable
1/4 t onion powder
1/4 t ground cumin
pinch ground cinnamon
salt and pepper to taste

At home: combine everything in a zip locking plastic bag.

In camp: add about 1 1/2 cups hot water. Stir and allow the vegetables and quinoa to rehydrate. Stir again. Season with salt and pepper.

Dicentra- what is 1/2 vegetable?
where can I get dried Quinoa? Or do I have to do it myself?

That is supposed to read 1/2 t vegetable bouillon powder. :)

You have to cook and dehydrate the quinoa yourself. Same with the split peas – unless you use soup mix. Rice or couscous could be substituted for the quinoa.

Thanks, I though you might want me to add 1/2 veggie of my choice.
I found the split pea soup at PCC Market quite good- I think I'll try it with your recipe.
