However, your setup will work fine. Many use similar setups. As for the veggie can, I recommend boiling only (no cooking) in case there's anything to the "lining" fear.
The veggie can will last a long time, being steel, as long as you take care to prevent rust – which is hard. Then again, you can always replace it for free!

Yeah, its just for boiling.
I was watching that 'Beer cans used as cooking pots' awhile back and I think I'll be fine if I only use the veggie can once then replace it before the next trip.
Don't forget your windscreen! :) This is a pretty common, pretty reliable set-up. It may take some fiddling to get a proper distance from flame to pot, but when it comes to DIY, the fiddling is half the fun.

How high should the pot be from the flame? 1.5 in.?
Somebody in one of these threads, or maybe it was that cantankerous stove maker in Maine did a lot of experimenting and decided the distance to the flame wasn't too critical. 1.5. in or less is probably fine.
There is a good article at thru-hiker.com concerning this. Their research supports a distance of 1.25 to 2.25 inches. See link below:
I really don't know if there is any substance to this but when I was playing with my versions of various stove designs I would get a good roaring boil and then manually rise and lower the pot . At some point the boil seems stronger and that was my sweet spot.

I got it all put together, (except for esbits) and the whole thing with my LMF Spork, windscreen, bandana and lighter weighs 5.3oz.
It is quite a simple system, but I just don't se the point of cooking during a summer weekend, so I think I am going to start researching how to go without hot food. I understand the phycological benifit of hot food, but for a summer weekend?
If anyone who has gone without cooking, I would appreciate your input.

If I were to bring a cooking system for something, it would be cocoa – not tea. And the added weight of all the sugar I like in my tea would be a waste of time.
