I don't know what HDR shots are, both those look amazing!

In 25 words or less, HDR (High Dynamic Range) is multiple images taken at proper exposure, over exposure, and under exposure then merged and tone mapped with a computer program. I use Photomatix.
I'll admit I that tweaked these a bit excessively but I like them all the same.
