Any advice on wetsuit brands/models? I would be using it mostly for Southern Utah excursions when the water is still quite chilly.

Instead of getting a one piece suit, you might want to look at getting the separate pieces for the top and bottom. On a hot day it is nice to be able to take off the top and still keep your legs warm in the water. Neoprene socks are also helpful.. I went canyoneering south of zion last summer, and even on a hot day the water was insanely cold.

I haven't been canyoneering. I've used wetsuits for a few scuba dives. I rented some stuff from Pinnacle and they were good. If you follow Phil's advice about getting a separate top and bottom, they have the "Escape Two Piece" which is what I wore for my dives. It's a pair of pants with bib, and a separate top. I was mostly fine in 50 degree water (my hands and head weren't covered, so they got cold).

At some point I want to try Patagonia's wetsuits.
