Found powdered hummus at Winco the other day, in the bulk foods. With a pita or crackers, and add a little paprika to the powder, I think it'll make a nice change of taste on the trail. Kelly

If you make your own it dehydrates really well.
Be sure to take a packet of olive oil with you – it really makes it great once rehydrated :)
I second the recommendation for olive oil. I usually carry some to pour into meals anyway, so I just pack extra for the hummous. Makes a world of difference.
This is a staple at the backpacking camp I work at. It's pretty good stuff (though not nearly so good as real hummus), but poor prep can make it really rough. Mostly, you need to err on the side of overhydrating it, it really is a lot better with olive oil, and also does better with some spices/hot sauce. While not really necessary, lemon juice really helps. Given the opportunity, I'll use about 1 single use packet per 4 people. Given adequate time/motivation, I like to spice it at home for my own trips. I'd consider black pepper, paprika, chili powder, paprika, garlic powder, and salt. Sriracha helps (I have decided that this is a luxury I'm willing to carry). This makes a good first day meal if you like to carry more fresh things the first day–try it with pita or flatbread and avocado, cucumber, or tomato. This is a tier-2 meal for me–I'm mostly happy with a cheese/cracker/nut mix and PB/honey/cracker rotation, with a few extras thrown in occasionally for variety.

Minimus.biz had this brand of sriracha called Texas Pete that was really good and sold in single serve packets. I used to bring instant Hummus…but for some reason it made me really gassy. To the point that I had to leave the beak open on my Hexamid to get more airflow on a freezing cold night.
