My wife and I will possibly do this hike in late August or early September. Should we expect shoulder season weather or summer or something in between?

My guess is 60ish days and 30ish nights. It certainly could be colder and/or have decent snows but I think you will be fine. I think late august is a great time of year : no bugs and fewer people.
I was planning to do this trip the first week of September in 2013 with my (now) wife but had some things come up at the last minute and had to bail.
K K, the answer to your question is "yes" – weather could be any of your three alternatives. Or all on the same hike. Most like shoulder season weather, the best time of year for the trip. Chilly nights, warm but not sweltering days, little rain. But anything is possible there as the Tetons can trap weather for days. Be prepared.
