    Locale: Homesteading On An Island In The PNW

    Today is National Nacho Day (is there a day for everything??) so for Tater Tuesday I came up with a cheese nacho-ish flavored mashed potato dish.

    I used Simply Organic's Fajita seasoning mix. For the cheddar cheese the single servings sold next to the string cheese work well. You can also get CoJack and Pepper Jack in some stores as well.

    I hope you like it!

    Nacho Taters:

    In a quart freezer bag put:

    3/4 cup instant mashed potatoes
    2 Tbsp freeze dried corn
    2 Tbsp dried bell peppers (diced)
    2 Tbsp instant dry milk
    2 tsp fajita seasoning mix
    1/4 tsp dried diced garlic

    Also take:
    1 ounce cheddar cheese
    tortilla chips

    Cube up the cheese and add to bag. Add in 1 1/2 cups hot water. Stir fast, and stir well. Seal bag and let sit in a cozy for 10 minutes. Stir again and enjoy. Munch away with chips.

    Serves 1.

    Note: As usual this is not high in sodium, so salt to taste if you feel it needs it.

    I made these this evening, and I did the taste test with my eyes closed picturing myself at the end of a day of hiking in PNW drizzle ready to hop into my sleeping bag as soon as I eat something warm and tasty. Food tastes different when I'm outside where I belong. This combination will definitely work. Since there was no cheese in the house, and I'd rather hike 15 miles in the mountains than drive 1 mile to the grocery store, I used the Idahoan 4-cheese instant potatoes I had with all the other ingredients as listed. Good one, Sarah!
