Vegetarian. Endurance athlete. For many, putting these two terms together is an oxymoron, but the number of vegetarian athletes gives credence to the match. There doesn't seem to be a lot of data specifically on vegetarian backpackers, but they are out there, as I can attest. In this article I'll discuss how easy it is to adapt a healthy, balanced vegetarian athlete's home diet to the trail, and give an example of a typical day of vegetarian trail food.

Hey Eric,
Most anything will rehydrate if given long enough-and especially if you don’t mind cold food.
Ramen and couscous both come back to like easily in cold water.
All it takes is about 2-4 as much time as boiling water :-)
