    Hi,

    I recently purchased powdered eggs to take on trail. When trying it at home, the smell was completely different compared to normal eggs. I poured the reconstituted mix directly into my ramen, like I would do with normal eggs to make egg drop soup. The result was not egg drop soup. It tasted incredibly awful, and ended up in the nearest trash can.

    I purchased eggylicious brand powdered eggs, and they expire in November of 2025.

    Any advice is appreciated.

    I ordered cinnamonster from amazon (#1 in powdered whole eggs) and the flavor is pretty good 👍 not like fresh eggs but comparable to a frozen omelet.

    To me, powdered eggs don’t taste exactly like fresh eggs in ramen, but usually they’re not awful.

    I use OvaEasy powdered eggs.  I usually use them in recipies that call for eggs.  Recently, I experimented with frying powdered eggs (as in an omelet).  To me, it tasted like airplane food.  Not the best but it would probably taste great on the trail.  My 2 cents.

    Ditto on ovaeasy.  I opened one bag in spring, finished in fall, no spoilage.  It’s pasteurized which might help with long term storage, don’t know about other brands

    So! You want freeze-dried raw eggs, not powdered, which are dehydrated. OvaEasy is a great start.

    I like OvaEasy scrambled, with lots of rehydrated salsa, or in a burrito with other things. They need help for sure. They also don’t act like a real egg in soup. But they don’t taste bad ever, ime.

    Is this a product? Or MYOG? Since everything is better with salsa, it sounds like a good idea.

    I buy dehydrated tomatoes, onions, peppers, and carrots from harmony house.  Used to buy them from packitgourmet but they quit selling.

    Add to beans with spice and stuff that I dehydrate

    That’s sort of like salsa

    Yes, that’s what I do, too. I’ve got some cilantro bullion as well. Sun-dried tomatoes add some bite. But the whole thing isn’t much like salsa. :)

    I see that Salsa Queen sells several flavors in several sizes.

    And if you have access to a dehydrator or freeze-dryer, you can dehydrate/FD most salsa easily (do it on parchment paper!). Just avoid any with oil added or honey/corn syrup (yeah, why salsa should be sweetened is lost on me…..)

    I’ve dehydrated my own tomatoes, peppers, and onions but it’s a lot of work.  Easier to just buy it.

    If I grow more than I can eat fresh, I’ll dehydrate the excess.

    I noticed that if I dry them hotter, like maybe 140F, then they turn black.  If I dry them cooler, like at 120F, they keep their color.  I wonder if this is common to others.

    Jerry, very much, low and cool is the way with salsa to dry it :-)

     

    And yes, salsa is life! Adds so much zest to the taste buds :-D
