is the sputtering just an annoying feature which influences performance or is there any possible risk involved? I’ve got a gas only Gravity (now being sold as the Gravity EF)which I intend to use as my winterstove in converted canister modus.

I don’t think there is any risk attached. I am happy to use it that way. But note: that’s just a personal opinion.
