    Here is a meal that I love to eat on the trail. It is a great tasting, hearty meal full of calories and protein. The meal serves 2 people. I have multiplied this mean out to serve groups of 12.

    -Enjoy

    1/2 lb dried ground chicken/turkey
    4 oz dried peas
    1 1/2 cups instant rice
    1/2 can dried powdered thai curry paste
    1/2 cup unsalted cashew pieces
    2 chicken bouillon cubes
    1 pkg powdered coconut milk
    2 1/2 cups water

    Pour enough water into the bags containing the chicken and peas to cover
    them. Allow the food to rehydrate for 30 minutes.

    Pour the 2 1/2 cups water into a cooking pot. Heat the water to a full
    boil. Once boiling add the rice to the pot. Remove from heat and place
    pot into pot cozy. Let sit for 5 minutes. Drain water from food bags.
    Add remaining ingredients to pot and stir well. Heat over low heat just enough to heat all the ingredients. Let sit for 5 minutes and
    serve.

    For the curry paste I prefer to buy Maesri Karee Yellow Curry Paste, 4 oz. can, from Uwajimaya. I dry the paste in my food dehydrator and then powder it using a coffee grinder. Feel free to use what ever curry that you prefer.

    I'm going to have to look for canned curry paste now. I assume you don't mean the stuff in the little jars?

    Correct. In comes in what looks like cans of cat food, but you could use any type of curry paste that tastes good.

    Asian Markets. I've seen it at Central Market too.

    Sarbar also has it for sale on her site if you can't find it locally.

    I'm in love this this stuff!

    You get it in little green "tins". Man! A little does it make up a striking good jolt "out there!"

    Throw in some dried wasabi peas . . . and your set!

    If you don't sweat, you don't put enough on it!

    Be careful with using the word "curry", as this just means "sauce", would be like saying "salsa" to group all varieties together.

    Raleys (in central Calif.) carries the Thai curry powder.

    I even found a wonder tasting dried refried beans there. Looked everywhere before looking at my normal grocery market.

    I went to my local Indian/Pakistani/Fuji markets and get my raw spices then grind and make up my own curries.

    Wonderful African, Moroccan, and various asian curries.

    You can also buy the curry paste in little pouches. It's still the paste and not a powder. The one we get up here is from a company called Asian Home Gourmet but I have seen similar products in the US.

    Go to http://www.importfood.com for it – in both tins (the little cat food ones) or the bigger tubs, or as well pouches. Thai curry paste is near on forever shelf stable if the real thing, just pack in a small bag and carry.

    (For those of you who know me, I worked for Importfood for a couple years and it is a local Seattle based company)

    To simplify the process a little, is there any reason you couldn't add all of the ingredients into one freezer bag and then just add enough boiling water to rehydrate meat, cook instant rice and liquify sauce all at once, without the need to drain?

    i made my own dry paste by dehydrating wet paste after frying in coconut cream to unlock the flavours.

    It looks like rice that has been cooked and dehydrated. Uncle Ben's sells it in just about every supermarket I can think of along with other companies. It's pretty common. Usually boil water, pour in the instant rice, take water off heat, cover, then fluff with a fork after about a few minutes.

    You can of course make your own by cooking up and dehydrating most rices. Jasmine works well!

    Thanks! I've gotten Uncle Ben's brown rice many times but have never noticed the white rice. I'll try to find it and maybe even dehydrate my own.
