We were on the last day of a 5 day Sierra hike in the area of Thousand Island Lake, and we had a recipe I hoped to try. My wife put together the final ingredient list, and it turned out perfect and easy to make. No eggs??
LOL, Sarah is quite right (culinarily – is that a word?). This is a "faux carbonara", but when you're out in the wilderness, I'm sure it's double-yum! And it can be taken on longer trips, when raw eggs would become a bit scary…
Sounds good to me :) I got somewhat used to the American version already, so this is not a big no no to me. In Italy it's pancetta, raw eggs ( more yolk than whites) and no cream . I am getting hungry!
You can use Ova Easy eggs btw. No reason to avoid the eggs unless you have an allergy :-)
I add a bit of NIDO powder to mine as a cream substitute, that and I use self stabilized bacon.
I do recommend trying the Carbonara without cream, at least once. I first had the cream version when I came to this country and it took me a bit to get used to it. I still prefer it without even though I have had some great creamy versions as well.

It was my wife Tuckie's recipe, and didn't include milk, cream, or eggs, although the powdered versions of those could be easily added. It was very good with this recipe. Try it and report back!
Thats one of wifes favourite dishes, must try it out on next trip. :-)
