    Harmonyhouse. The backpackers kit.. has veggies, beans, lentils.. you name it. All good stuff and fast dekivery too

    You could try red lentils.  These cook very quickly and are easily rehydrated.

    I use my own dehydrated meals based on backpackingchef.com and they can be used both for cold soaking while hiking or heated.  The Chef Glen McAllister has some great meals to try.
