    I recently bought a pack of freeze dried snap peas, and they were pretty good. I wonder what the nutritional value of those is, because they seemed more like a cheetos type snack than real food. I know they just remove water in that process, so do you think the freeze dried versions are otherwise equivalent to fresh or cooked vegetables?

    I'm not sure what the nutritional value is but they sure are tasty. I like the wasbi ones (in moderation). I think they are fried to remove moisture, so probably higher fat content.

    They w ould probably be ok nutrient-wise, though recently dehydrated (as opposed to freeze dried)ones would probably have a bit more taste and nutrients – though both ways lower the nutrient value a bit. The number one thing dehydration seem to do is to permanently remove any part of their taste that has a volatile component. So for example dehydrated onions, while they do taste good, are a different beast altogether. I'm guessing green beans don't change much.

    I take it you ate them as is, like potato chips? I'll have to dry some with the dehydrator and try them that way. Kale Chips tastes pretty good that way just add any flavorings desired – wasabi is always good. Also (and this may be my secret sin) you can make kale (and even potato chips) by nuking them in the microwave. If you do a large full sized plate go 4-5 minutes.
