    I have a wonderfully delicious recipe for granola that involves fresh coconut and coconut oil (as well as vanilla and honey) and I wondered how that would do sitting in a few resupply boxes in a post office for a few weeks?

    Does anyone know if a mixture of various nuts and the coconut products would go rancid??

    Would vacuum sealing help?

    I've never had trail mix with coconut go bad. I keep extra virgin coconut oil on the counter, so I'm going to say no. It has a good shelf life. Red palm oil also has good shelf life.

    Yes and no. Never use double dipping in your oil – and for that matter ANY oil or butter. Saliva can make a mess of any food, fast, in temps.
    As for nuts, yes, they can go rancid. It takes time though.
    Fresh coconut? Yes, it can turn. Any dried coconut can turn. It takes time. Ironically, the sweetened type will go faster. Buy as dry as you can get, then it is good for often a year if stored well.

    Jennifer, would you mind sharing your recipe? Being diabetic, I'm always looking for alternative ways of slipping in some calories that won't blow the lid off my blood sugar…
