I had this recipe for lunch today and it was good. Really, really good!
Alfredo Mashed Potatoes:
In a quart freezer bag put:
3/4 cup instant mashed potatoes
2 Tbsp instant milk
1 Tbsp Simply Organic dry Alfredo mixAlso take:
1 Tbsp olive oil
2 Tbsp Parmesan cheeseAdd 1 cup boiling water and oil and stir fast to mix well. Stir in cheese. As soon as the potatoes cool down enough, start eating.
Serves 1.
Notes: This is the perfect for a one person lunch. If you have a big appetite it won't be enough for dinner. One could easily add in freeze dried vegetables or a pouch of meat to round it out and make it bigger. If you add FD vegetables, you will need to add an additional amount of water (1:1 ratio to vegetables) and let sit in a cozy for 5 minutes.
Sodium content on this meal is great! The mix contains 330 mg of sodium for each Tbsp. That is excellent. If you are used to heavy sodium, you may want to double the amount of mix used.Sep 11, 2007 at 2:17 pm #1401858wow… that sounds really good…
