edit: I've started and will document the effort.
Anyone ever dehydrated fresh mangos? If so, what's good process to follow?
1) wash
2) remove the skin and seed
3) slice into very thin slicesfreeze to long term storage
That's all I can find. Is there more?

This leaves them rather crisp – I haven't found a good way to leave them chewy and not too moist to store. Probably just a matter of trial and error on thickness.
