Has anyone tried to dehydrate spaghetti squash, at least mixed with something else? Both my preservation books just have a general category of winter squash, and one of them says they don't recommend dehydrating squash.
Oct 3, 2011 at 7:54 pm #1786312Yes… it works very well. Cook it first… then dry the strands on mesh lined dehydrator trays. This takes about 6 to 8 hours in my Excalibur at 135°F. I simply cover it with boiling water to rehydrate.

I find that, like sweet potatoes, spaghetti squash will lose a bit of flavor if kept for more than 3 or 4 months after drying so I tend to dry it closer to my trips.
