i know this was discussed before, but i was wondering, if you make yogurt leather, at what temp. should it be dried at? will the higher temp destroy the good bacteria so all you would be getting is the calcium? i would think so. also by draining off the whey, would it dry quicker?

I dry my yogurt leather at 135ºF and I stir the whey back in. Bacteria culture dies with heat above 125ºF – at least that is my experience with making homemade yogurt. I mostly use yogurt leather for the calcium so it has never been a concern. So if you want to keep the cultures alive I suppose you could dry it at around 110ºF to 115ºF. I haven't tried it that low though.
