This is a filling trail recipe I put together using a variation of a sauce mix from Bill McCartney’s “Travel Light- Eat Heavy”.
1 pack of Knorr Vegetable Recipe Mix
½ pack of Thick and Zesty Spaghetti Sauce Mix
2 tsp Italian Seasoning
3 Tbsp Sun Dried Tomatoes, minced
2 Tbsp Olive Oil
2 blocks of Ramen Noodles (any flavor)
7 oz. package of ChickenPlace first 4 ingredients in a container (freezer bag or I use an insulated Zip Lock container) add 1¼ cups of boiling water. Set aside to “cook”.
In separate containers place blocks of Ramen Noodles and add a cup of boiling water to each. Allow to “cook” 10 minutes. When time is up stir in half the chicken, 1 Tbsp. of olive oil and half the sauce into each container. Serves 2. Approximate Calories/Serving 646.
This recipe could be put together at home in freezer bags or the ingredients could be purchased in trail towns to assemble on the trail.
